Ingredients
2cupsrolled oatsold-fashioned, not quick oats
1scoopabout ¼ cup Ancient Nutrition Vanilla Whey Protein
½cuppumpkin seeds
½cupmixed nutsroughly chopped (almonds, cashews, or pecans)
2tablespoonschia seeds
½teaspooncinnamon
¼teaspoonsea salt
⅓cupmaple syrup
3tablespoonsneutral oil or coconut oilmelted
1teaspoonvanilla extract
2tablespoonspeanut butter
Instructions
Preheat your oven to 325°F.
In a large bowl, combine the rolled oats, protein powder, pumpkin seeds, chopped nuts, chia seeds, cinnamon, and salt. Stir until evenly combined.
In a small bowl or measuring cup, whisk together the maple syrup, oil, vanilla extract, and nut butter.
Pour the wet mixture over the dry ingredients and stir well until everything is thoroughly coated.
Transfer the mixture to your prepared baking sheet, spread into an even layer, and press down firmly with the back of a spatula.
Bake for 22–25 minutes, until the edges are golden and the center looks set. Do not stir.
Remove from the oven and let cool completely at room temperature — at least 30 minutes — before breaking into clusters.
Store in an airtight container at room temperature for up to 2 weeks.
