Ingredients

  • 2 cups rolled oats old-fashioned, not quick oats
  • 1 scoop about ¼ cup Ancient Nutrition Vanilla Whey Protein
  • ½ cup pumpkin seeds
  • ½ cup mixed nuts roughly chopped (almonds, cashews, or pecans)
  • 2 tablespoons chia seeds
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • cup maple syrup
  • 3 tablespoons neutral oil or coconut oil melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons peanut butter

Instructions

  • Preheat your oven to 325°F.
  • In a large bowl, combine the rolled oats, protein powder, pumpkin seeds, chopped nuts, chia seeds, cinnamon, and salt. Stir until evenly combined.
  • In a small bowl or measuring cup, whisk together the maple syrup, oil, vanilla extract, and nut butter.
  • Pour the wet mixture over the dry ingredients and stir well until everything is thoroughly coated.
  • Transfer the mixture to your prepared baking sheet, spread into an even layer, and press down firmly with the back of a spatula.
  • Bake for 22–25 minutes, until the edges are golden and the center looks set. Do not stir.
  • Remove from the oven and let cool completely at room temperature — at least 30 minutes — before breaking into clusters.
  • Store in an airtight container at room temperature for up to 2 weeks.
